I Thought There Was Nothing To Eat...

You know the feeling when you think your refrigerator and pantry are bare and then you discover you have the makings for a darn good meal in your own house?  The sweet potato and kale stir fry with fried eggs on top we were able to throw together was pretty yummy.

  1. Great idea and it uses up the leftovers really well.

  2. LOL I threw together a beef soup because all I have in the house are 'ingredients'. I wanted something fast sooooo bad. But the soup was darn good. Your creation looks really good too.

    1. Don't you hate it when you have to figure out what to do with 'ingredients' :-)

  3. You are quite the inventive cook. But I am amazed you had kale since that is one thing I use almost as soon as it comes in the house (I use in juices because I can't stand to eat the stuff). Kale wilts around here if I keep it for more than a few days.

    1. Actually, I think that kale is pretty sturdy, but in this case the kale was frozen--a great way to keep it on hand.

  4. Looks good - provided you can eat egg, which I can't! :D
